In a large frying pan or pot with a lid, heat olive oil and cook the chopped chicken breasts until they are golden brown, which should take about 5 to 8 minutes.

Set aside the chicken on a plate, and pour in the onion and sauté for 3-4 minutes until tender.

Add red pepper, garlic, chorizo, and Cajun seasoning. Cook this mixture for an additional 5 minutes.

Add the chicken back into the mixture along with long grain rice, tomatoes, and chicken stock.

Bring to the boil, lower the heat, and simmer the covered pan/pot for 20-25 minutes until the rice becomes tender. Add boiled water from the kettle if needed during this time.
