light brown muscovado sugar

plain chocolate chips or chunks

Prepare two baking trays by lining them with non-stick baking paper.

In a bowl, combine salted butter, light brown muscovado sugar, and granulated sugar. Beat the mixture until it becomes creamy.

Mix in vanilla extract and the egg thoroughly.

Use a sifter to pour plain flour into your bowl, then add bicarbonate of soda and salt. Mix all the ingredients together using a wooden spoon or spatula.

Add plain chocolate chips or chunks and stir well so they are evenly distributed in the mixture.

Preheat the oven to 190°C.

Spoon the mixture onto the baking trays using a teaspoon. Ensure enough space between them as they will spread as they cook. You should be able to make approximately 30 cookies with this amount of mixture.

Cook in the oven for 8-10 minutes until they become golden brown on the edges and remain slightly tender in the middle when you poke them.

Remove from the oven and allow the trays to sit for a few minutes before transferring your cookies onto a cooling rack.
