Create a marinade by combining olive oil, garlic, dried oregano, ground cumin, paprika, salt, and pepper in a bowl.

Place the chicken thighs in the marinade, making sure they are fully covered. Then, cover the bowl and put it in the refrigerator for a minimum of 30 minutes.

Heat a frying pan to medium-high heat. Cook the marinated chicken thighs for 5 minutes on each side, or until they are cooked through.

Allow the chicken to rest for a few minutes, then proceed to cut it into thin strips.

Grill each pita bread for approximately 1 minute on each side to make them warm.

Assemble the gyros by arranging grilled chicken slices on the pita bread and adding cherry tomatoes, cucumber, red onion, feta cheese and fresh parsley. Top with tzatsiki sauce.
