Ingredients

pastry
375 g
plain flour
250 g
butter
130 g
caster sugar
1
medium free-range egg
1 splash
cold water
5 g
icing sugar
150 ml
fresh cream
filling
800 g
mincemeat
2
tangerines, zest grated & flesh chopped
1
apple, finely diced

Steps

1
Preheat your oven to 200°C.
2
For the sweet pastry, gently combine flour, butter, sugar, and egg with a splash of cold water until it forms a dough. Avoid overworking the dough.
3
Cover the pastry with cling film and let it chill in the refrigerator while you prepare the filling.
4
For the filling, transfer the mincemeat into a bowl, grate the zest of the tangerines into the mincemeat, and peel and chop the fruit. Add the tangerine and apple pieces to the bowl and mix by hand.
5
Roll the pastry to a thickness of 3mm. Use a round pastry cutter to create 12 discs of pastry, each measuring 9cm. Gently press the pastry into the muffin cups and generously fill each one with the mincemeat mixture, ensuring it reaches three-quarters up the side of the pastry-lined cup.
6
Using a fluted pastry cutter, create 12 pastry circles with a diameter of 8cm for the lids (slightly larger than the top of the muffin cups). Position a lid on each pie and gently press it down. Sprinkle with caster sugar.
7
Bake in the oven for 20 minutes.
8
Move to a wire rack to cool. Sprinkle with icing sugar and serve while warm with fresh cream.
