Place a large roasting dish in the oven (ensuring it is large enough to hold the potatoes in one layer) and preheat the oven to 200°C.

Place the potatoes into a spacious pot and add just enough water to submerge them slightly.

After adding salt, wait for the water to come to a boil.

Once the water has reached a rolling boil, reduce the heat, and simmer the uncovered potatoes for 2 minutes vigorously.

At the same time, add olive oil to the preheated roasting dish and allow it to heat for a few minutes until it becomes very hot.

After draining the potatoes in a colander, give the colander a few shakes to rough them up or make them fluffy.

Add flour and shake again to ensure they are evenly and thinly coated.

Place the potatoes gently into the hot oil. Rotate and toss them so that they are covered evenly. Ensure that they are spread out in one layer, giving them enough space. Cook for 15 minutes.

Remove the potatoes from the oven and flip them. Continue roasting for an additional 15 minutes.

Flip them over once more and return them to the oven for an additional 10-20 minutes, or until they achieve a desirable golden and crispy texture.
