Roll out the puff pastry into a sizable rectangle and then divide it into two long rectangles.

Position a layer of sausage meat mixture along the center of each pastry rectangle, then brush one edge of each with beaten egg.

Fold the opposite side of the pastry onto the edge brushed with egg. Press down to seal and trim any excess. Divide each pastry roll into 8-10 small sausage rolls.

Arrange the sausage rolls on a baking tray with the join on the bottom, brush the tops with beaten egg, and place them in the oven to bake for 15-20 minutes or until they are crisp, golden, and the sausage meat is thoroughly cooked.
