Ingredients
filling
1 kg
apples, peeled, cored & sliced
140 g
golden caster sugar
0.5 tsp
cinnamon
3 tbsp
plain flour
pastry
225 g
butter
55 g
golden caster sugar
2
eggs
350 g
plain flour
Steps
1
Line a large baking sheet with paper towels. Spread the apple slices evenly on top. Cover with more paper towels and set aside.
2
For the pastry, mix the butter and golden caster sugar (reserve some for dusting) in a large bowl until lightly combined. Add a whole egg and a yolk (reserve the white). Beat for about 1 minute until it looks like slightly scrambled egg.
3
Add the plain flour a third at a time, mixing until it starts to clump, then gather it together with your hands. Shape into a ball.
4
Cover the dough with cling film and refrigerate for 45 minutes.
5
For the filling, combine the golden caster sugar, cinnamon, and plain flour in a bowl large enough to hold the apples.
6
Once the pastry has chilled, preheat the oven to 190°C.
7
Gently whisk the reserved egg white with a fork.
8
Keep one third of the pastry wrapped. Roll out the rest to line a baking dish about 20-30cm wide and 4cm deep, leaving a slight overhang.
9
Shape the remaining third into a pie lid larger than the base of the dish.
10
Add the dried apples to the cinnamon and sugar mixture. Gently mix with your hands and promptly pile high in the pastry-lined dish.
11
Dab a little water along the pastry edges, then lay the pastry lid over the apples and press the edges firmly to seal. Trim the excess with a sharp knife and cut five small slits in the lid.
12
Brush the top with the egg white and dust with golden caster sugar.
