375 g
plain flour
250 g
butter
130 g
caster sugar
1
medium free-range egg
1 splash
cold water
5 g
icing sugar
150 ml
fresh cream
filling
800 g
mincemeat
2
tangerines, zest grated & flesh chopped
1
apple, finely diced
Steps
1
Preheat the oven to 200°C.
2
For the pastry, gently combine the plain flour, butter, caster sugar and egg with a splash of cold water until it forms a dough. Don't overwork it.
3
Cover the pastry with cling film and chill in the fridge while you make the filling.
4
For the filling, put the mincemeat in a bowl and grate in the tangerine zest. Peel and chop the tangerines and apple, add to the bowl and mix by hand.
5
Roll the pastry to 3mm thick. Use a 9cm round cutter to cut 12 discs. Gently press them into the muffin cups and fill each three-quarters full with the mincemeat mixture.
6
Use an 8cm fluted cutter to cut 12 lids, slightly larger than the tops of the muffin cups. Put a lid on each pie and press down gently. Sprinkle with caster sugar.
7
Bake for 20 minutes.
8
Cool on a wire rack. Sprinkle with icing sugar and serve warm with fresh cream.
