Ingredients
Steps
Ingredients
185 g
unsalted butter, cut into cubes
185 g
dark chocolate, broken into chunks
85 g
plain flour
40 g
cocoa powder
50 g
white chocolate, broken into small chunks
50 g
milk chocolate, broken into small chunks
3
large eggs
275 g
golden caster sugar
Steps
1
Add the unsalted butter and dark chocolate to a bowl.
2
Fill a small saucepan a quarter full with hot water. Rest the bowl on the rim so it doesn't touch the water. Heat on low until the butter and chocolate melt, stirring occasionally.
3
Take the bowl off the pan and let the mixture cool to room temperature.
4
As the chocolate cools, preheat the oven to 180°C.
5
Cut a square of foil or non-stick baking parchment to line the base of a shallow 20cm square tin.
6
Crack the large eggs into a large bowl and add the golden caster sugar. Whisk until thick, creamy and mousse-like.
7
Drizzle the cooled chocolate mixture over the egg mousse. Gently fold it in with a spatula until mottled dark brown, working slowly so the mixture doesn't deflate.
8
Sift the plain flour and cocoa powder over the chocolate mixture, shaking the sieve to spread them evenly. Gently fold them in.
9
Add the white chocolate and milk chocolate chunks and mix until evenly distributed.
10
Transfer the mixture to the prepped tin and spread it into the corners.
11
Bake for 25 minutes, then keep baking until the top has a shiny, papery crust and the edges start to pull away from the tin.
12
Remove the tin from the oven and leave it to cool completely.
13
Cut into quarters, then cut each quarter into four squares.
